				<title>Low-Fat Veggie Kedgeree</title>

				&lt;p&gt;I&apos;ve had this recipe kicking around the kitchen for a few months now so I thought I&apos;d slap it on here to keep it safe, that and the fact we all thought it was yummy :-)&lt;/p&gt;&lt;p&gt;&lt;strong&gt;&amp;nbsp;Ingredients&lt;/strong&gt;&lt;/p&gt;&lt;ul&gt;&lt;li&gt;Fry Light Spray&lt;/li&gt;&lt;li&gt;1 Onion - Peeled and finely chopped&lt;/li&gt;&lt;li&gt;2 Garlic Cloves - Peeled and finely chopped&lt;/li&gt;&lt;li&gt;1tsp finely grated ginger&lt;/li&gt;&lt;li&gt;2tsp cumin seeds&lt;/li&gt;&lt;li&gt;2tsp milk&lt;/li&gt;&lt;li&gt;Curry Powder&lt;/li&gt;&lt;li&gt;1tsp ground cinnamon&lt;/li&gt;&lt;li&gt;1/2tsp crushed cardamon seeds &lt;/li&gt;&lt;li&gt;1 clove&lt;/li&gt;&lt;li&gt;110g/4oz dried split lentils - rinsed and drained&lt;/li&gt;&lt;li&gt;200g/7oz brown basmati rice - rinsed and drained&lt;/li&gt;&lt;li&gt;1 carrot - peeled and cut into 1cm 1/2 dice&lt;/li&gt;&lt;li&gt;110/4oz fine green beans - cut into 1cm1/2in lengths.&lt;/li&gt;&lt;li&gt;Freshly ground black pepper&lt;/li&gt;&lt;li&gt;3tbsp finely chopped coriander leaves.&lt;/li&gt;&lt;li&gt;To serve:&lt;strong&gt; &lt;/strong&gt;4 eggs - boiled and halved&lt;/li&gt;&lt;li&gt;200g/7oz very low fat natural yoghurt, whisked&lt;/li&gt;&lt;li&gt;Chilli Powder or Paprika.&lt;/li&gt;&lt;/ul&gt;&lt;p&gt;&lt;strong&gt;Method&lt;/strong&gt;&lt;/p&gt;&lt;p&gt;Spray a large, heavy-based saucepan with Fry Light and place over a medium heat. Add the onion, garlic and ginger and stir-fry for three to four minutes.&lt;/p&gt;&lt;p&gt;Stir in the cumin seeds, curry powder, cinnamon, cardamom seeds and clove and stir-fry for one minute. Add the lentils, rice, carrot and beans and mix well. Pour in 700ml/24floz of water and bring to the boil. &lt;/p&gt;&lt;p&gt;Lower the heat, cover and cook gently for 30-40 minutes, or until all the liquid has been adsorbed and the mixture is slightly sticky (do not be tempted to uncover the saucepan during this time).&lt;/p&gt;&lt;p&gt;&amp;nbsp;Remove the pan from the heat and stand, covered, for 10-12 minutes.&lt;/p&gt;&lt;p&gt;Fluff up the lentil mixture with a fork and season with pepper. Stir in the coriander and spoon into four sallow dishes.&lt;/p&gt;&lt;p&gt;Garnish with the eggs and serve immediately with the yoghurt, sprinkled with chilli powder or paprika.&lt;/p&gt;&lt;p&gt;----------------------&lt;/p&gt;&lt;p&gt;This is really filling and although I probably wouldn&apos;t eat it without the yoghurt it wasn&apos;t bad for a veggie recipe. &lt;/p&gt;&lt;p&gt;James.&amp;nbsp;&lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;

				<title>Flash, Bang, Whoop - Fireworks</title>

I&apos;ve been on holiday this week so I don&apos;t have an excuse not to do it this time. Not that I try to avoid it but the rest of the family tell these things better than me anyway.&lt;/p&gt;
&lt;p&gt;Right, enough waffle....&lt;/p&gt;
&lt;p&gt;A busy little week so far. Yesterday started with Julie going to the doctor&apos;s to get Krystal checked over again. Her rash on her face still hasn&apos;t gone yet and apparently it should have by now. We&apos;ve now got cream for it which seems to be doing the job so far.&lt;/p&gt;
&lt;p&gt;Rather than waiting&amp;nbsp;for them Kory and&amp;nbsp;I went down the supermarket to buy some yummy&amp;nbsp;ingredients for dinner. It&apos;s only the second time we&apos;ve cooked it but we decided to make &lt;a href=&quot;http://www.thebuckinghamfamily.co.uk/index.cfm?mode=entry&amp;amp;entry=24ACABAA-D506-1A91-053BCF3DA076E26E&quot;&gt;Mango &amp;amp; Chicken&lt;/a&gt; yummy!!&lt;/p&gt;
&lt;p&gt;After lunch and the kids had their sleep we headed off down the beach. We thought we&apos;d try and avoid the need to park in the city centre and then have to walk down the beach for this year&apos;s fireworks display. Instead we took Kory down to Rambos for an hour to let him have a play and&amp;nbsp;build up an appetite for dinner.&amp;nbsp;&lt;br /&gt;
&lt;br /&gt;
When his belly did start to rumble we headed off to &lt;a target=&quot;_blank&quot; href=&quot;http://www.jimmychungs.com/&quot;&gt;Jimmy Chung&lt;/a&gt; which is a local chinese &amp;quot;All you can eat&amp;quot; buffet. It&apos;s the first time we&apos;ve been to the one down the beach and it was actually quite nice and the range of food was HUGE! We had loads and Kory, although saying he was full-up,&amp;nbsp;managed to polish off&amp;nbsp;3 tubs of jelly. &amp;quot;1 Red, 1 Green and 1 Orange&amp;quot; as he kept&amp;nbsp;reminding us all night!&lt;/p&gt;

In case you don&apos;t know everyone in Aberdeen goes to a large field just at the side of the Amusements.&lt;/p&gt;

				<title>Mango &amp; Chicken</title>

				Here&apos;s a strangely-yummy recipe which one of the guys at work managed to get from &lt;a href=&quot;http://www.cafe52.net/&quot; target=&quot;_blank&quot;&gt;the restaurant&lt;/a&gt; we went to for our Xmas party.   It makes loads of sauce, probably enough for 3 or 4 chicken breasts, so do the top part for EACH chicken breast but only do one lot of sauce, or you&apos;ll be eating mango sauce forever! I&apos;ve put below what the recipe says, but I only used 1 leek and it was more than enough, but I&apos;ll let you decide!&lt;br /&gt;&lt;br /&gt;----&lt;br /&gt;&lt;br /&gt;1 chicken breast&lt;br /&gt;1 streaky bacon rasher&lt;br /&gt;2 slices fresh mango&lt;br /&gt;4 x leaves fresh basil&lt;br /&gt;&lt;br /&gt;- Stuff chicken with bacon , mango and basil&lt;br /&gt;&lt;br /&gt;- Butter a piece of tinfoil season the chicken with pepper and roll in the tinfoil.&lt;br /&gt;&lt;br /&gt;- Cook in 180 degree oven for 15 minutes (or until chicken cooked)&lt;br /&gt;&lt;br /&gt;Sauce - 250 ml. good chicken stock&lt;br /&gt;250 ml double cream&lt;br /&gt;2 leeks chopped finely&lt;br /&gt;1 fresh mango sliced&lt;br /&gt;cook the leeks and the mango in stock and cream for 15 minutes (do not boil) then blitz in a processor.&lt;br /&gt;&lt;br /&gt;It&apos;s a really strange combination of ingredients which actually works quite well. God knows who thought of this one though.&lt;br /&gt;&lt;br /&gt;If you give it a shot let us know what you think.&lt;br /&gt;&lt;br /&gt;James
